To create the Lychee Passionfruit Bubble Tea Black blend, Indian, Chinese, and Ceylon black tea were blended with the natural oils of lychee and passionfruit for a delicate aroma, even over ice.
This blend was created as part of the TEALEAVES World’s Most Expensive Bubble Tea Project for San Francisco Design Week (SFDW) 2017, bespoke blended to be the tea base for the Boba Teashake bubble tea recipe by The St. Regis San Francisco Executive Chef Franck Desplechin. Learn more at

Blend Story

Blended specifically for bubble tea as the first exploration of TEALEAVES’ World’s Most Expensive Bubble Tea project in collaboration with The St. Regis San Francisco’s Executive Chef Franck Desplechin for San Francisco Design Week 2017, TEALEAVES’ Master Blenders created a Lychee Passionfruit Bubble Tea blend of whole tea leaves blended specifically for ice, using an approach completely different than that for hot tea.

Riffing off Chef’s elevated bubble tea recipe, called the “Boba Teashake”, and particularly the challenging salted caramel foam and passionfruit coulis, the blend had to simultaneously highlight salt with cream, while balancing tropical fruity notes. The discordance of salt, fruit, cream living in the same space as tannins and maltiness was finally solved through extensive recipe formulation, using the right lychee and passionfruit natural oils grounded in a medium-body black tea.

Color was a major consideration and it took almost a hundred batches to blend black teas from multiple lots and harvests to produce a stylish brown that aligned with the sophisticated colors of the sea salt caramel foam and tapioca pearls.

“When creating the Boba Teashake, the Lychee Passionfruit Bubble Tea blend was prepared with proper infusion times and temperature to achieve the the best expression of taste, terroir, and nuanced flavor, while preventing the over-extraction of bitter tannins typically found in regular, over-steeped bubble tea. We infused the tapioca pearls with TEALEAVES Mountain Berry herbal tea to add an extra dimension of taste and texture, and paired it with a passionfruit coulis, sea salt caramel foam, and fleur de sel. The name of the Boba Teashake is an homage to the technique of using a cocktail shaker to cool the beverage and create the signature bubbles, instead of the typical method of letting the ice melt inside, which would dilute the flavor. We wanted to unearth bubble tea’s true potential by using the highest quality ingredients and five-star culinary techniques to create something unforgettably delicious.”
