Notes from Grant Sceney, Lead Mixologist at Fairmont Pacific Rim:

 

“I wanted to achieve that Pantone color without using any artificial coloring, because that completely takes away from the other two components of the cocktail— the subtlety of Organic Long Life Green and the mood of Enlightenment. So I went with cucumber, lime juice and some chartreuse.”

Benzaiten

Serves 1

Ingredients

  • 2 Ounces
    Organic Long Life Green Tea Infused Gin (See Recipe Below)
  • 2/3 Ounces
    Rosemary Cucumber Syrup (See Recipe Below)
  • 1 Ounce
    Lime Juice
  • 1/4 Ounce
    Green Chartreuse
  • Garnish
    Rosemary
  • Garnish
    Cucumber

Steps

  1. Build all ingredients (except garnish) into cocktail shaker with ice.

  2. Shake vigorously for 1 min.

  3. Double strain into chilled coupette.

  4. Garnish with rosemary and sliced cucumber.

  5. Enjoy!

Rosemary Cucumber Syrup

Serves 1

Ingredients

  • 500 Millilitres
    Water
  • 500 Millilitres
    Cucumber Juice | Roughly 2 cucumbers, pushed through a vegetable juice with skin intact
  • 1 Kilogram
    Sugar
  • 5 Sprigs
    Rosemary

Steps

  1. Combine sugar and water in pot and bring to a boil.

  2. Once all sugar is combined, remove from heat.

  3. Add rosemary to sugar syrup and allow to stand for 1 hour.

  4. Strain rosemary and add cucumber juice.

  5. Combine and store in a clean plastic or glass container.

  6. Keep refrigerated.
