Sugar Plum Sparkler

Visions of sugar plums dance in a Christmas fairy tale.

Fragrant Sugar Plum Fairy rooibos with its sweet red berries and hint of citrus pairs with a spiced Calvados and topped with dry sparkling wine. Finish with a tart green apple slice for a fairy tale come true.

“There was a lot of trial and error creating the Sugar Plum Fairy tea syrup – it took 12 hours over three days to create the right product. The temperature and timing had to be precise, or the syrup would become grainy and too dark. Honey added at the very end gives the syrup depth.”

Ingredients

Sugar Plum Sparkler

  • 1 ½ oz. Spice-Infused Calvados (see below)
  • 1 oz. Sugar Plum Fairy Tea Syrup (see below)
  • Dry Sparkling Wine
  • 1 Apple Slice (for garnish)

Spice-Infused Calvados

  • 2 Cloves
  • 2 Cinnamon Sticks
  • 750 mL Calvados

Sugar Plum Fairy Tea Syrup

  • 1 Tbsp TEALEAVES Organic Sugar Plum Fairy Loose Leaf Tea
  • 8 oz. Hot Water, 208ºF
  • 8 oz. White Sugar
  • ¾ Teaspoon Honey

Instructions

Sugar Plum Sparkler

  1. In a cocktail shaker, combine the Calvados and tea syrup with ice, and shake until chilled.
  2. Pour into a champagne flute and top with sparkling wine.
  3. Garnish with an apple slice.

Spice-Infused Calvados

  1. Add 2 cloves and 2 sticks of cinnamon to 750 ml Calvados.
  2. Shake the bottle and infuse overnight at room temperature.

Sugar Plum Fairy Tea Syrup

  1. Use a ratio of 1 tablespoon of Sugar Plum Fairy loose leaf tea per 8 fluid ounces of water (208ºF is ideal).
  2. Steep the tea for 4 minutes.
  3. Strain, and add to a saucepan containing the white sugar.
  4. Simmer uncovered for 20 minutes.
  5. Add honey to the syrup (1 tablespoon per liter of syrup).
  6. Cool and store in bottles.
