Olivier Belliard

Chef Olivier Belliard is a highly distinguished hospitality industry expert with over 20 years of experience. He holds a Master’s Certificate in Hospitality Management from Cornell University School of Hotel Administration, along with a Bachelor’s Degree in culinary studies from Pullman Cabourg. Chef Belliard’s career history as executive chef spans over many luxury hotels and Michelin-star restaurants around the globe. He has gained experience working closely with some of the world’s leading chefs, including Michel Rostang, Jean-Georges Vongerichten and Nicolas Le Bec.

"Regarding my fondest tea memory, it is actually very interesting as the first part of my life I almost never considered tea as something that could create memories--it was more of a beverage I was forced to drink whenever I became sick. Time has changed and I traveled to Asia and Thailand where tea is more popular than water. I have been amazed and impressed to see the relationship that people encounter with tea. I remember the delicate flavors and fragrances they were using, enabling the tea to become a tool for your mind and your soul."

Following this successful endeavour, he also served in the opening teams of Le Meridien Dahab Spa Resort in Egpyt and Park Hyatt Marina Club and Spa in Saudi Arabia. Before his current position at The St. Regis San Francisco, Belliard served as the Executive Chef at The St. Regis Le Morne peninsula Resort in Mauritius.

Currently overseeing the exceptional culinary team at the St. Regis San Francisco, Chef Belliard is developing the bespoke fine-dining menus for elegant gala events, personalized catering for St. Regis Residence owners, in-room private dining, and cuisine at Vitrine restaurant. With extensive knowledge of world cuisine through his travels, Chef Belliard enjoys embracing the ingredients of the region, and infusing them with a host of international techniques and flavors to introduce a fresh approach. He seamlessly weaves in his passion for seafood and Asian-inspired ingredients to create new dishes and tastes.
