Shortly after graduation from the University of Houston, Conrad N. Hilton College of Hotel and Restaurant Management, Yu re-joined the team at Caesars Palace. Ambitious and with a zest for learning and professional growth, Yu began cross-training in hotel operations, food and beverage, and casino operations. Her previous experience and familiarity with Hyakumi prepared her for the successful opening of Beijing Noodle No. 9 in December 2008.
Maintaining an emphasis on delivering quality and service to dining customers, Shelly Yu is the Director of Asian dining for Caesars Palace in Las Vegas and oversees operations for Beijing Noodle No. 9, Hyakumi, and Empress Court restaurants. She also works closely with Director of Restaurants Franck Savoy and the general managers at each restaurant to further develop food programs and options reflective of Caesars Palace’s world-class standards in dining operations.

Prior to her current position, she had taken on the roles of General Manager of Beijing Noodle No. 9, Hyakumi, and Empress Court restaurants, Front Desk Manager, and Assistant Telecommunications Manager. Before joining Caesars Palace, Yu held several positions with Hilton Hotels in Houston and participated in the internship program at Walt Disney World in Florida. In addition to her passion for the culinary arts, Yu enjoys travelling, dining out, and is a self-proclaimed professional shopper.
