Starting his career as the impressive young Chef de Cuisine of The Dining Room in Sydney, Chef Shaun quickly earned international accolades for both himself and the restaurant. His experience and talent then took him over to the United States where he made his mark as the Executive Sous Chef at Atelier in New York City before moving to Miami to take on the position as Executive Chef at The Setai South Beach. In June of 2009, Chef Shaun returned to New York to be the Executive Chef and Proprietor of his first solo project, the eponymous SHO Shaun Hergatt at The Setai, New York.
