At the tender age of sixteen, he began a chef apprenticeship at Café du Raisin in his hometown and learned valuable skills such as how to select the best seasonal products, contemporary cooking techniques, and how to pair food with wines. At the end of his apprenticeship, he held the best score amongst the 160 apprentices who took the examination in Vaud, Switzerland. Later on, he obtained a diploma of advanced studies "Diplôme d'Études Hôtelières Supérieures" in hotel management at the world renowned Lausanne Hotel School in Lausanne, Switzerland.
Gilles Charlet has been working with Hyatt Hotels & Resorts in the role of Project Manager in several countries, including Egypt, China, Vietnam, Switzerland, and the United Arab Emirates. In addition to being part of many construction and renovation projects of a variety of Hyatt Hotels in different countries, he also played a crucial role in the successful opening of the Grand Hyatt Macau in September of 2009 and of the Hyatt Regency Danang Resort and Spa in Vietnam in 2011.
We first met Gilles (Food & Beverage Director) when he implemented our tea program throughout the famous Grand Hyatt Dubai at opening in 2003.
He presently holds the position of lecturer of Management Principles, Human Resource Management, and Project Management at the prestigious Swiss Hotel Management School in Leysin.
