JAMAICAN SPICED PEAR AND AGED CHEDDAR FLAN

3 pears
Jamaican Spice Tea (about 1 cup steeped)
Sugar
Pastry for a 9" flan
5oz aged white cheddar
1) Poach pears in Jamaican Spice Tea and a little sugar until tender and coloured from the tea.
2) Line a 9" flan shell with pie dough and pre-bake until light brown in colour.
3) Slice the pears and place in the bottom of the flan shell.
4) Top with cheddar and pour the royal mix over the surface.
5) Bake on the bottom shelf of the oven at 350°F. until the royal has set.
Royal mix
Mix all ingredients in a bowl and strain.
