Although the best teas are typically grown at higher altitudes, Assam teas are an exception to the rule. Grown in a valley, with high temperatures and bountiful rainfall, Assam is one of the world's largest tea-growing regions, producing golden tipped leaves that brew a characteristically malty and full-bodied infusion. The long picking season begins in March, when the tea plants come to life, and lasts until mid-December. The second flushes, harvested June through August, are generally considered to be the best, and are distinguished by a high amount of silver and golden tips, and strong liquor and flavor.
