This mild green tea is full of natural vitamins and antioxidants (polyphenols). Our blenders carefully select and blend out 5 to 7 China Anhui tea garden harvests, using 1st flush (spring) Young Hyson teas. Made from young green (unfermented) leaves that are thinly rolled - yielding a twisted appearance that unfurls into large leaves upon steeping. Known as "flourishing spring" or "Yu Chin Cha", this organic green tea is selected only from Chun Mee (small, twisted leaf) with small percentage of Foong Mee (larger, curly leaf).
Infuse at 60 seconds, followed by second steeping of 80 seconds at 80 Celcius. Low temperature, filtered water is essential - otherwise, the mineral content will clump down on the key bright oils and the higher temperature will overextract tannins (which leads to bitterness).
