PALATE
Complex, broad with sharp notes.
Swaths of silk, a myriad of colours. Wandering through the street markets, I hear people swapping stories. While looking for a Moroccan pouf to add to my interior collection, I quench my thirst with a cup of tea. The sweltering heat and the scents of heady spices make the world spin, but the tea grounds me and I am on my way.
For over a decade, Darjeelings have provided inspiration to complex blending that has resulted in teas such as the T Blend, Afternoon Tea, and Duchess of Bedford. The multi-step process of withering, rolling, oxidation, and firing has to be carefully handled to accentuate the muscatel character - which is the very reason to drink Darjeelings as opposed to Keemun or Yunnan black teas.
